A limited release Single Vineyard wine, with grapes harvested by hand from the original ‘Home Block’ Vineyard in March of 2019.
40% whole bunches along with uncrushed whole berries were added to small open 2 tonne fermenters for 3 days of cold soak. Natural yeasts were allowed to initiate fermentation before overseeding with cultured Burgundian yeast. The ferment was macerated by foot twice per day, to preserve delicate varietal flavour and capture fruit freshness.
The whole bunch stems provide a wonderful spice and structure to the resultant wine.
Wine was pressed after 10 days to second use Tonnellerie Tremeaux hogsheads for a maturation of 10 months prior to assemblage and bottling.
Colour/Appearance: Brick red to garnet
Aromatics: Aromas of cherry, red berries and savoury spice.
Palate: Textural red to blue berry fruits, cherry cola and toast. Stemmy tannins add structure and complexity adding interest to the palate. Subtle oak provides palate richness, further structure and depth.
Cellaring potential: 5-10 years
